How to Make Icy Wind Cake

Icy wind cake is a typical Croatian dessert and can be found at almost every birthday party. It is ideal for spring or summer when there are fresh strawberries available.

History of the Icy Wind Cake

Although it is typical for Croatia its origins are in Austro Hungarian empire. Then it was called the Spanish Windcake. The Croatian version is more compact.

Recipe

Ingredients for the Meringue crust

9 egg whites, 300 dkg of sugar, and 1 tablespoon of apple vinegar

Ingredients for the cream

9 egg yolks, 4 tablespoons of sugar, 4 tablespoons of wheat flour, and 3 vanilla sugars.

Extras

Half a liter of whipped cream, approximately 10 strawberries, 5 kiwis and 2 bananas.

Preparing the cake

First, you make the Meringue crust.

As we already mentioned you will need 9 egg whites, 300 dkg of sugar, and 1 tablespoon of apple vinegar. It is all right to use the alcohol vinegar if you do not have the apple one. It is used only for shine.

First, you mix the egg white. Then add sugar and vinegar and mix it all until there is no trace of sugar in the mixture anymore.

Then you prepare it for baking. Cover the casserole with baking paper in order to be able to remove the crust easily from the casserole after baking.

You bake the crust for 1 hour at the temperature of 150C.

Note: you can prepare the crust day earlier.

After you separate it from the baking paper, slice it into three equal parts. Then the crust is prepared for filling.

Preparing the cream

For the cream, you will need 9 egg yolks, 4 tablespoons of sugar, 4 tablespoons of wheat flour, and 3 vanilla sugars.

First mix the egg yolks and sugar to smooth the cream. Then add the required amount of flour and vanilla sugars.

The next step is to take 2,5dcl of milk and boil it. When it is boiling slowly add the mixed cream and stir the mixture at slow temperature till it is thickened.

Note: If you do not stir it or stir it slowly on a strong fire the eggs will cook and lose the texture and the flavor of the cream.    

Then leave the cream to cool completely. Afterward, add one whole margarine 250gr.

Note: Make sure the cream is completely cold when you put margarine in because otherwise the cream will not thicken and it will leak from the cake once you place it on it.

Preparing the fruit

The choice of the fruit is up to you. The usual mix is one red fruit such as strawberries, one green fruit usually kiwi, and one yellow fruit like bananas, but it is up to you. If you do not have strawberries or it is not their season you can always use cherries.

Note: strawberries or cherries can leak because they are too watery in texture. So, make sure to drain them from the water before you place them on the cake.

Second note: make sure to sprinkle the bananas with lemon juice in order for them not to change the color to brown before serving the cake.

No matter which fruit you choose make sure to slice it into thin pieces.

Finally, mix half a liter of the whipped cream.

Now you have all the parts of the cake made and it is time to put all the parts together.

Place the first part of the crust and then on the top of it goes one-third of the cream and the first layer of fruit usually it is the bananas because they are the heaviest but it is up to you. Then place a small layer of whipped cream. The next third of the crust goes on top of it.

Repeat the procedure with all three layers.

Finally, use the rest of the whipped cream to cover it from all sides.

The decor of the cake depends on you. You can make it smooth or wavy.
